 Direct sow seeds 1/4-1/2 inch deep as soon as air temperatures are consistently between 40-85 degF. Thin seedlings to 4-6 inches apart when they reach about 2 inches tall - this single step has the biggest impact on root size and quality. Plant in full to partial sun in loose, well-worked soil.

Consistent soil moisture is the key to clean, well-formed roots. Irregular watering causes roots to crack and develop off flavors - a light layer of mulch around plants goes a long way toward keeping moisture even between waterings.

Harvest roots when they reach 3-4 inches in diameter, typically 50-60 days from sowing. Roots left in the ground past this point or exposed to sustained heat above 85 degF may become pithy and bitter. Fall crops harvested after a light frost are often the sweetest. Greens can be cut at any point during the growing season.
